I wanted to share this very simple and tasty recipe that is a staple in our house, we came across it accidentally came across when Olivia was newborn. We threw a piece of gammon in the slow cooker one day and planned to have dinner around 7 pm, Olivia had other plans and the gammon was left in for longer, when we got it out it fell apart and was so good and that's when I looked into actual recipes we could try.
We have tried a few different things but found that this one worked the best for our family. This is a two part recipe, firstly is the slow cooker part and secondly is a bit of time in the oven.
For the slow cooker you will need:
- Gammon joint, we use a 750g one
- 1 onion roughly sliced
- 1 bouquet garni
- Salt and pepper
- Water to cover around 1/3 of gammon
- Honey
I usually put the gammon on around 11 am on low for about 2 hours, and then turn up to high for around 5 hours, I do turn occasionally. I put the gammon in the middle with the onion around the edge, then I add the water, salt and pepper.
Once you are ready to have your gammon removed from the slow cooker and transfer to a roasting tin, I use 2 forks to break the gammon up but it should just fall apart. Once shredded pour over your honey, I use enough to give the gammon a generous coating of it. We then bake this in the over for around 20 minutes giving it a stir half way through so it doesn't dry out.
We do have this recipe on the regular as it is such a simple meal to do that really isn't a lot of effort, we normally serve this with cheesy mash pie or a cheese and potato bake. This feeds 3 of us with some left over as Lilly isn't keen.
