Gooey Flapjacks

A little simple family recipe for you again, this time for some very tasty and gooey flapjacks. I was given a bag of rolled out not long again and personally we don't like these for porridge so we found the next best thing. These are a great little treat to munch on with a cuppa and great to create with your little ones, Lilly and Olivia love to mix the oats in for me and pour the mixture into the tin too. Recipe: 125g Butter 100g Brown Sugar 4 tbsp Golden Syrup 275g rolled oats Method: 1. Preheat your oven to 180oC/gas mark 4. 2. Melt your butter, sugar and golden syrup together over a bain-marie (bowl over boiling pan of water). 3. Mix in the oats and stir until all the oats are completely covered. 4. Pour your oat mixture into an overproof tin line with baking paper. 5. Bake in the oven for around 30 minutes, until golden brown. 6. The end of Covid restrictions

What a strange 2 years it has been! Back in March 2020 when the world started to take action about Covid I was heavily pregnant with Olivia and scared as hell. I remember the rules changing before they closed the schools, back at the beginning of March was when it started to affect me, the maternity units decided that just one person would be aloud to attend a birth rather than two, this broke my heart as my Mother in law was meant be there to witness her grand daughter being born. The talk of covid was around the school like wild fire and many of us thought they should close the schools, especially with me being pregnant and just a week later Boris Johnson was announcing the closure, just for a few weeks....which ended in a lot more time than that. I feel very luckily for this time though as Lilly got to watch Olivia grow for so much more time that other siblings.  The lockdown was the strangest time ever, with only being allowed out for walks once a day and only going to the shop...

Finding being a Mum of 2 lonley

I am writing this, currently sitting on our bed rocking an almost 6 week old to sleep. Thisales up every one of my evenings lately and quite a lot of the day as she still whines a lot which puts strain on the family. I am starting to feel like a prisoner in my own room and feel like most of my days are spent looking at the same four walls, rewatching shows from years ago. I know lockdown isn't helping the way I feel and I know that a lot of Mum's are in the same situation as we are as a family. I am trying to put a brave face on for all three members of my family as I know this lockdown is affecting them too but sometimes I just want to scream about it and cry.  Don't get me wrong I am loving being a Mum of two, having more time with Lils than I ever imagined and getting to stay in a bubble with Olivia for a while but I think I am ready for a bit of normality to hit and for me to actually have places to go and people to see.
